Iced Coffee Popsicles

It is easy to fall into the same ritual every day.

A piping hot, strong coffee in the morning. A nice mellow creamy coffee for elevenses. One mid-afternoon when you hit the after-lunch slump. Sometimes an after-dinner kick, too.

But when the weather is nice, hot coffee is often not quite as appealing.

Yes, an iced coffee is often the go-to, but there isn’t quite as much variety with these than with ordinary coffees. So, how about making the iced coffee into something else?

An iced coffee popsicle is the perfect thing to reach for when the weather gets hot. And, you can make as many as you wish to plan ahead so there is no slaving away in the kitchen unnecessarily.

The only thing hard about making these coffee ice-lollies is having to wait until they freeze!

The below will make 4 popsicles.

Iced Coffee Popsicles


  • 1 cup cold coffee (~250ml)
  • 100ml cold milk
  • 1 – 4 tablespoons granulated sugar


  1. Whisk together the sugar, coffee and milk. You may wish to add more milk or sugar to taste
  2. Pour into popsicle moulds or cups and add wooden sticks before freezing
  3. Freeze until firm, preferably overnight


Adjust the coffee to taste before adding to moulds.

The coffee and milk need to be cold to reduce the number of ice crystals formed when freezing. The colder they are, the quicker they will freeze.

For a little twist, add milk to the bottom of the popsicle mould, or you can use flavoured coffee!
